Protein Banana Pancakes That Don’t Suck
Who loves pancakes? I sure do, but if I plan to feel full, satisfied, and ready to take on the world - buttermilk pancakes are not an option. I developed these as I have been on this healthy journey of mine. The truth is, if I want a buttermilk pancake, I will have one. These are just a great alternative, and they check all of the boxes I have for my own personal health and fitness goals. Frankly, a full recipe is usually too much for me, but they store well and I pop them in the toaster for another meal if there are any left. These are made in a blender by dumping all of your ingredients straight in. They are high protein and macro friendly + the kids will love them! I eat them with sugar free syrup, but dealers choice on toppings.

Blender - Vitamix is it! I have used Ninja and Nutri Bullets, but this is superior and worth every penny. Costco has them on sale right now, so treat yourself! It is a beast and worth every penny. Easy to clean, powerful, and a workhorse.
Pans - Again, I have tried them ALL. I have an induction range which can make it difficult to find good cookware that is compatible. These are pricey, but I have NEVER met a pan that comes close to a professional grade pan as much as Hexclad. Totally worth the hype, and getting over the Ramsey effect of it all. These are durable, they conduct heat evenly, and they are so easy to clean. They will last you forever. Treat yourself!
RECIPE:
1/2 Cup of your favorite dry oats - These can be gluten free, or whatever kind you like. I use Trader Joe’s Organic Rolled Oats with Ancient Grains and Seeds. They happen to be gluten free as well.
1/4 Cup Greek Yogurt - I use plain, non-fat. You can use whatever kind you like, but I would encourage you not to use a flavored yogurt. Non dairy yogurts will work too.
2 Eggs - Resist the urge to use only egg whites. They don’t come out right. I tried it!
1 teaspoon Baking Powder
1/2 teaspoon Salt
1 ripe or overly ripe banana - won’t make a difference so long as it is ripe.
1 teaspoon Vanilla Extract
1 Scoop Protein Powder - I use Isopure unflavored/unsweetened Whey Protein. Feel free to use whatever kind you like. I would encourage you to stay on the more neutral flavor side. All kinds of protein powders are totally fine. I have made this with a vanilla vegan powder with great results as well.
Optional - 1/4 teaspoon Cinnnamon
Instructions:
Place all ingredients into a blender. Blend until smooth.
Heat an 8-inch pan on medium-high until hot, but not scalding where you can see heat waves rising from the pan. I use avocado pan spray, but you can use whatever you’d like.
Pour about half of the batter into the pan. Cover with a lid and reduce temp to medium. Cook for about 3 minutes.
Remove the lid and you should see bubbles in the middle of the pancake and it should look a little cooked around the edges. Flip!
Cook for an additional 1 minute uncovered. Remove from pan and repeat the process.
***You can make these mini if you’d like, Mickey Mouse shaped, whatever. I just like them this way because they are super fluffy and I don’t have to hover over the stove.
***I add mini chocolate chips after I pour the batter, right before I place the lid on top for the kiddos. You can also add berries in the same way if you’d like.
